Cheese Wafers
A friend recently shared this recipe with us after we begged for it :) She served these at a baby shower, and yall, they are SO good. They are the perfect mixture of a cheese straw and a shortbread cookie. They are light, easy to make, and pair well with so many different things. They also freeze well, so you can make a batch of dough to have on hand. While the origin of this recipe is unknown, at least to us, here it is:
1/2 tsp cayenne pepper powder
1 tsp salt
2.5 cups all-purpose flour
1 tsp baking powder
1/2 lb Kraft sharp cheddar
2 sticks butter
1 cup finely chopped pecans
Sift cayenne, salt, flour and baking powder. In a mixing bowl, cream the cheese and butter with a dough hook. Add dry ingredients and pecans. Divide in half and shape into logs. Roll in aluminum foil or wax paper. Refrigerate or freeze for several hours. Slice 1/4" thick and place on greased baking sheets. Bake at 350 for 20 to 22 minutes or until lightly browned. Cool on racks.
Makes 5 dozen.
