Pumpkin Spice Cake

Pumpkin spice and everything nice! We continue our week of pumpkin recipes with this gorgeous cake. Talk about a stunner! We adapted this from a muffin recipe, so we will list the directions for both. Let us know if you try it! 

 

PUMPKIN SPICE MUFFINS

 

4 eggs, lightly beaten

3 cups sugar

1 cup oil

1 15.5 oz can pumpkin

3.5 cups flour

2 tsp baking soda

1 tsp baking powder

2 tsp salt

1 tsp ground cinnamon

1 tsp allspice

1 tsp nutmeg

2/3 cup water

1 cup mini chocolate chips

 

Preheat oven to 375 degrees. Combine eggs, sugar, oil and pumpkin. Mix well with an electric mixer. Combine dry ingredients. Add to egg & oil mixture alternating with water. Mix well. Fold in chocolate chips. Pour into greased bundt pan (or 21 lined muffin cups). Bake muffins for 25 minutes, cake for 50 minutes or until a toothpick comes out clean. Enjoy!
