Squash Croquettes

We think the generations before us had it right. They made delicious recipes that weren't fussy, didn't have a million ingredients, and could feed a crowd! So, we've decided to revisit some recipe cards that are covered in dust. We're starting with Squash Croquettes, something I had never had before. It's basically a mini fried version of squash casserole. It's simple to make and will knock everyone's socks off!
